To this ancient grape vine, we have
dedicated 0,8 hectare of hillside land, exposure North/East.
The grapes are harvested and selected by hand and
the soft pressing of the pomace is followed by a slow,
temperature controlled fermentation at 18 °C.
The wine matures in small stainless steel vats and
it is bottled just before the following harvest. After
the bottling, the Grechello matures in our tufa soil
caves, at the naturally constant temperature of 15
°C for a further six months prior to release.
The Grechello has a bright pale straw colour that
develops to a more golden tinge with age. It has a
gentle spicy nose, a clean ripe middle palate and
a lingering, lightly minerally flavour on the finish.
Serve lightly chilled with cold starters, white meats,
salads and tasty fish dishes.
