| Soil Type |
Of volcanic origins rich in potassium, phosphorous
and other micro elements. Though well draining, this
type of soil retains sufficient moisture to sustain
the vine even in times of drought. The high concentration
of minerals in the soil favours the production of top
quality fruit. |
| Vineyards |
These are situated on the hills in Monte Porzio Catone
in the heart of the Frascati production area to the
South of Rome. |
| Vinification |
The grapes are harvested by hand. A 24 hours cold
maceration of the whole berries is followed by very
soft pressing of the pomace. The fermentation is very
slow and cool at around 18 °C. Then the wine is left
to mature in stainless steel vats and bottled not before
the first week of March. |
| Tasting Notes |
Bright pale straw colour. Characteristic grapey nose.
Soft, ripely textured palate with a dry and persistent
fruity flavours and a nutty overtones. |
| Serving |
Ideal served chilled as an aperitif or with starters,
bruschette, crostini and pizza. Excellent with pasta
and rice dishes, white meats and fish. |
